THE BEAN SCENE

 

News of the Green

 

    Green beans may literally be one of the smallest segments of coffee roasting, but their tiny size belies their big importance. As any roaster knows, the finished product is only as good as the ingredients that go into it.
    While most roasters have their favorite green beans—the ones they choose year after year for that perfect roast profile—there are always new and unusual green beans making their way into roasteries around the country. And while it would be nice to have time to sample every single one, that’s simply not a reality in the life of most roasters.
    Which is why Roast has done the groundwork for you. In each issue, Roast’s column, “The Bean Scene,” will give you information about some of the exciting new beans that are on their way from around the world. For each green bean, we’ll include a variety of the important features, including origin, flavor, availability and contact information for samples.
     The Bean Scene’s goal is to highlight some truly unique beans and make your sourcing job a little easier.

Origin: Central Altura, high-grown;
Municipality of Angelina Estate in Jinotega, Nicaragua


Growing Information


Altitude: 1,200–1,580 meters
Variety: Mainly Caturra, some Bourbon
Main Harvest: December–March
Availability: January–February


Characteristics


Preparation: Washed and sun-dried, no screening, but beans are uniform (all above 14 screen size, 60 percent are 16–19 screen size)

Malinal Estate
Nayarit, Mexico

 

Geography


Origin: Nayarit, Mexico


Growing Information


Altitude: 1,000–1,300 meters
Variety: Predominantly Typica SCAA Grade 1
Growing information: Shade-grown


Characteristics


Preparation: Washed, pulped natural and naturals available in screens 17–18, 15–16, and peaberry; shipped from mill with barcode ID
Flavor: Sweet, good body with honey, citrus, floral and chocolate; varies by processing style.
Farm Program: Quality-based profit sharing with traceability to individual farmers in Nayarit, Mexico
